Well first off your mechanic knows squat because that is a Holley not a Edelbrock carb lol. Also is the electric choke even hooked up?

nothing to do with your problem but whats the second spring looking thing on the accelerator cables side?
The choke heater and thus the warning light for these trucks originally ran through the oil pressure switch (right above the oil filter on the engine) The choke warning light is designed to come on if that switch is showing low pressure (initial startup the light will be on because there is no pressure till the oil pump starts turning. If the light is randomly coming on while you are driving, I would look to the oil pressure switch not your choke. The switches can die, and alot of people will just route a new wire for the choke (+12v in on)
