What are people's thoughts about gaskets vs. RTV for the rear Differential???

A quality gasket is just as good as RTV and vice versa. Some vehicles use gaskets, some use RTV from the factory. For one of these trucks, either/or doesn't matter, which ever you want/prefer. I wouldn't hesitate to use either one or the other.

I usually keep a can of rtv in my truck and one in the shop. And it's all I have ever used on the differential cover

They make a silicone reusable gasket for most axles now, I would use one of those, less messy then rtv and less prone to tears and leaks over regular gaskets

Used blue rtv on my 14 bolt best seal I've ever done. Lay a bead barley put cover on w bolts n wait over night. Next day tighten  down n you'll never look back

i know with the Right Stuff (http://www.permatex.com/products-2/product-categories/gasketing/gasket-makers/permatex-the-right-stuff-gasket-maker-detail) i clean up the cover with a scraper and brake clean, put a bead around the cover and let it sit for 5 or so min or so while i clean the differential face. then put it on and tighten the bolts then add fluid and run it. most times its for the mud truck and then we go out and play with no leakage.
