Temp Sending - I6 250 --> 350 SBC

I pulled the inline 6 250 out of my 76' last week, and I'm getting ready to swap a 350 in there. The 250 had two temp units and I'm curious which one, or both I need to hook up to get the temp gauge working. Here's a pic showing the two temp sending units circled in red.

Curious, why would it have 2 temp units to begin with?

Does the truck with the 6-cylinder have a temperature gauge or an over-temperature idiot light?

I've got an actual temp gauge in my dash.

The one near the thermostat housing is the input for the gauge. The one in the head should be a switch. You can verify using an ohm meter. the front one should have a resistance value while the other should read infinite.
