I am thinking about purchasing a 87 Chevy 3/4 ton truck with a bad SB motor. I have a rebuilt 454 from a 76 suburban that I can put in it. I see threads where people are putting TBI/TPI engines, wiring & controllers but not the other way around. How much problem is it to decomputerize an 87 Chevy truck?

First obvious question would be why? as you would be giving up a lot of drivability.
Putting a 454 in there would require some specific things but..
If you want to fully strip the TBI wiring out it would be a task removing it from the integrated wiring.
You would also have to have a different sending unit in the tank and add a fuel pump.
Would it be hard, probably not, but going from SBC to BBC will require some specific parts that will add to the change.

I'll be adding a later 454 to my 75 Blazer and I'm keeping it EFI.
If you want to just eliminate the efi system it's pretty easy and straight forward

I currently have a 78 GMC 3/4 ton 4x4 with good drive train but cancerous body. I don't use the 4x4 very often and wouldn't mind having a lower truck (2 wheel drive) to allow me to haul a bike and other things should the need arise. Just easier to use. Now I just need to decide on pull 454 from 78 and install in 87 or put 87 4x2 body on 78 4x4 running gear. Or I will just keep looking and thinking about it.

Why not just buy another 2wd truck and keep your 4x4 or sell the 4x4 to fund building your 2wd?
