So my 82 with a 350 is having trouble starting in the morning. Takes three to four cranks to get her going and then I've got to give her a little extra gas for a few minutes or she'll die.
During the day (aka not cold start) it takes two cranks to get started.
I've literally zero experience with carbs and a fellow at the shop is saying I need to get an Edelbrock with electric choke. I'm willing to do this, but I'd think there would be something that could be done with the current carb for now. Any pointers or book recommendations for a noob on carb tuning? Thanks.

1982 should be electric originally. A picture of your current set up would be a good start.

The next time its cold and you want to start your truck, pop the hood first. Move the throttle just a little and the choke should snap shut, or at least most of the way. Pull the choke plate open with your finger and snap the throttle all the way back a couple of times and note whether or not it squirts fuel when you do this.

jaredts is correct, the choke butterfly should close almost all the way with 1 full depression of the throttle peddle before starting your truck. Check this first to see if your choke is working properly, might save you some money....
