Well, after much research I have finally arrived at my choice for a wheel/tire combo.
I'm kinda old school so I'm going for a somewhat classic look and I'm leaving the truck at stock height as I just like that factory rake for some reason. Anyway, here's my proposed set-up:
Crager S/S Wheels with BF Goodrich Radial T/A's
Front: 15X8 wheel, 4-1/4 backspacing, 245/60R15 tire, 26.6" tall, 9.8" installed tire width.
Rear: 15X10 wheel, 4-1/4 backspacing, 295/50R15 tire, 26.7" tall, 12.2" installed tire width.
I do like the look of a deep dish rim and there are reverse offsets available: 2-1/2" backspacing for the front and 3-3/4" backspacing for the rear but I'm afraid this will push the tires out too far and rub sheetmetal??
I know this a lot to digest but does anybody see any obvious problems with this set up?? I have the link that Chris provided about measuring backspacing but c'mon guys... It's 25 degree's out and I have a gravel driveway with no cover!! I know I'm being lazy but I figured I would try some "keyboard mechanics" before I put on the insulated coveralls!!

From looking at what you listed, 4.25" BS shouldn't be a problem. Are you lowered any? Stock ralleyes are 4" BS so you can also judge from there.

Dude tire/ wheel combos are tough. I had put the following setup on my truck:BFG P265/50R15 on all four corners with stock suspension. The BS on the rims is about 4.25" and the Diameter of the tire is about 25", and mounted the tire is about 11" wide. you can check out what this looks like at: 1977 Chevy Cheyenne It looks cool from some angles and handles descent. I do like the look of the wide tire stance, however, my speedometer reads 80mph when I am going 60mph. I also have completely destroyed the sidewalls on these tires either due to the weight of the 1/2 ton truck or the fact that the fronts did not like the way I corner turns. So too low is bad news. However, there was no scraping or rubbing on the body frame or wheel wells. I hope this information helps. I later put a set of Kelly Safari P235/75R15 on stock 15X7 Rally Wheels and was back to the stock look. It's nice but I'm looking to get a bigger tire to fill out the wheel wells a little more. I hope I helps for what it's worth.

I put 17" Torq Thrust 2's on my '86. They have a 4" backspace. I used Hancook Ventus S/T 255/60/R17, this combo puts the wheel at just the right spot, about an inch inside the wheel well. It keeps the truck classic, but with a modern spin.
