Im restorin a 87 v20 and I wanna put wagon wheels on it...a local trailer place has em brand new but thier 16x6....can they work on the truck with mud tires or do I hafta have 16x8 wheels??? ....im gonna go with 35's, Thanks.

Unless you're going to run skinny 35s, I wouldn't. They will balloon out and wear horribly. Hang on until at least some 16x8s show up. You can put rims off of a Dodge or Ford on it if you come across some. I don't mean factory ones because many are ugly, and Ford only up to 99 I think. Its common to see 35x10.50s here on duallies but I am not a fan of the look. I like the proper width wheels to match the tires.

Choptop is correct, the tires on that skinny of a rim will never wear right, and you will prematurely wear them out fast and be disappointed on the few miles you got out of them.
If you went with really skinny 35" (if you can find them), I think you will be disappointed this time on how they look on your truck. Better to wait or do more searching for something better.
Another note you should consider. Some trailer rims are not DOT approved for anything but trailers, so you should make sure and check into that.
