Is there a way to find out which size jets (and metering rods) came with a particular engine and/or engine car combo:
For example 77 monte carlo with 400 small block.
83 c-10 with 305
76 nova with 250 inline six etc. etc. etc.

Only possible way I can think of barring taking the carb apart is with carb numbers,and that could be iffy

There are Master Parts Books with the jet etc size to Rochester and Carter Carburetor ID numbers. This assumes the jets and metering rods haven't been changed in the last 30-40 years.

The only problem with the original AC Delco references (now obsolete to the best of my knowledge) is that they were updated on an annual subscription basis. If the subscriber allowed his/her subscription to lapse one time, updates would cease. So, "used books" may be incomplete due to subscription lapse, or crucial loose leaf pages may be missing.
As to the quality and completeness of the reference material, it was great. You could find part numbers for virtually every individual component. And, the individual parts were actually available! Books were published for carburetors & TBI, electrical assemblies, and brakes.
