For the stock oil pressure and temp sensors----both near the distributor and oil filter, do they need any type of thread sealant?

im going to say yes. if you buy new parts they will be on them

Now for the 2 pronged oil pressure sender for the choke, does it matter which way you plug the leads in?

no it is just making a connection for 12V to reach the choke

That's what i figured;  The 4.3 only has one 2 pronged sender near the distributor while the truck originally had 2 senders--one near distributor, one above oil filter.
