Is it ok to ditch the trim around the wheel wells and along the side of the truck?

The PO had removed all the trim except the drip rail and I like it. I also like the idea of avoiding the cost and hassle of locating and purchasing replacements. Currently the trim mounting holes are plugged and I plan to weld them over and may get rid of the drip rail too.

Trim or no trim, personal preference. I like the look of it with trim and if it is in good shape I'd leave it. Have you ever thought of the full wheel covers with the stock rims and white walls?

If you look closely at that same picture, that truck has the factory wheel well trim and trim separating the colors.
But like Zieg said, trim is all personal preference and in the eye of the beholder. I personally like the look of the factory trim.

You might also find them at swap meets and craigslist. There are stores and online companies that just deal in hubcaps and wheel covers too.
I know trucks could come with only the upper trim, I'm curious to know if your truck only had the lower trim or if the upper was removed at some point.

I don't know about new, they'd likely be pricey. Those wheel covers should be stainless, not chrome. I've repainted the black trimmed areas on stainless GMC and Chevrolet hubcaps on my trucks and had good results.

I saved a set from my 82 that got me hooked on the squarebody rage. They have been sitting in a cabinet for 17 years or so.
