I'm in the process of changing the front brake caliper, hoses, rotors and pads on my 73. When I took the rotors off I found that it had the 1.25 inch rotors. The rotors I bought (before I took them off) were the 1 inch.
Does it matter if I use the 1"rotors?

1" and 1.25" rotors are not interchangeable.

Thanks. The rotors I took off have a groove on both sides of the rotor. I've never seen this before. The grooves are in the same spot on each rotor.

If the grooves are identical in both rotors and they are almost in the middle of the pad surface on the rotor GM has put a single groove in rotors in the past.

Those grooves are machined by the manufacturer.
