i was looking at the options sticker inside the glove box of my 85 k10 and it said rear end 3.73 does this mean that i have 3.73 gears assuming that nobody has changed them and if so would i need to change them if i were to run 35's or 36's?

yes assuming no one has changed them they would be 3.73 gears.  35 's or 36's should be fine depending on what you use the truck for.  but overall that gearing should be ok.
