Is there any way to put new rims like the Chevy 21" on a 77 C10? I want to try not to use adapters. Is there anything like changing rotors something? I know the new Chevy rims use a 6 lug pattern and the 77 uses a 5 lug pattern.

You can have the front hubs and rear axles drilled for the correct bolt pattern. If the 07's use the same 6x5.5 pattern you could also swap to 4wd axles and brake drums on the rear end.

If you would want to go a more expensive but perhaps simpler way, you might be able to get some brand new factory wheels without holes drilled in them and get them drilled for your bolt pattern.
but it would probably cost an arm and a leg.

2wd 3/4 rotors where 6 bolt and 4x4 rear end out to do the job

I believe the 07s use a metric pattern, not the same as the old 6 lug pattern. When talking 73 / 87 all 3/4 tons use 8 lugs 2 and 4 wheel drive. You also have to consider that the new trucks have a different offset. The wheels are more like a front wheel drive car, the mounting face is closer to the outside of the wheel. Adapters might be your best best for a couple reasons. (1) to get the wheel out where it belongs in the wheel opening (2) to keep it from rubbing against frame / suspension parts when turning.
