Does anybody know of manuals or other sources that has a good description of removing the bed from my 79 c-10 stepside?

Just unbolt it or cut the bolts with a torch. Unplug the tail lights, disconnect the rear end vent tube, disconnect the fuel filler, and disconnect the ground wire from the bed to the frame. Get some buddies to help you lift it off.
