I have an 81 C10 and my water, oil, battery, etc. gauges are all lights, yet I've seen pics of other guys' trucks that have actual gauges. What's with that? Does it depend on the "trim level" (Scottsdale, Silverado, etc.)?

It depends on the options and/or the trim.

Really? Mine's a Scottsdale too, yet I just have lights. Interesting....

Just means it was optioned that way.... GM offered the idiot lights as a base feature, as alot of their older/regular customers still liked having the lights out of habit, whereas the gauges usually appealed to the younger or more tech/mechcanical crowd... The reason for the difference, with a truck at the same trim level, is cause the orig owner paid extra for that option usually(generally an option sheet of all factory installed items could be found under the seat/behind glovebox/etc).... There is ofcourse the possibilty that the gauges may have been replaced at some point as well...

A 73-87 Scottsdale is 1 step above base, if it has gauges, the purchaser added them to the truck on the option sheet.

Nucknoel, there are posts on the site where a swap from lights to gauges has been done if you want to have gauges.
