It'd be cool to do that with my truck but I already want Dakota Digital gauges and I don't think they make em for the newer truck dashes....

Highest Dakota goes right now it 1994, but if you have a cluster, they can make one for you.

Hmm, I wonder how much the whole conversion would cost though (dash, gauges, installation, etc.).  If it's gonna cost me like $1500+ then it's not really worth it.  Also, I've got a 4 spoke Grant Mahogany steering wheel. Would I have to use the newer steering column, and if so would my current wheel fit?

If you purchase it from me it is only $800 ($150 off) for a 5 gauge setup and $900 $150 off) for a 6 gauge setup.  You would have to ship the cluster to me though.

this is just my personal taste but I drive the old trucks because I like the old styling, interior and all. If I want to sit in a new truck interior I will go out and buy another new truck again. But to each their own as werewolf said.

Good point. Its a cool idea and a cool project, but it does take away from the old style feel of the truck.

I've seen this done before (besides the pic posted here) at another forum some time ago.  You'll need some plastic forming skills.  The dash, as mentioned, from the newer truck is dramatically deeper then the stock 73-87 dash.  As I recall, the newer dash is also slightly wider...but I don't completely remember the particulars.  Personally, I thought putting the newer dash in these trucks looked funky, especially when the doors are open.  The newer dash sticks out a lot further then the original 73-87 dash (I believe around 6" further..or at least that's how far it looks like).  I do recall the guy who did it said the wiring was a real pain...mostly integrating the newer air conditioning controls to the original 73-87 a/c equipment.

Anyone have additional pics or info for where one could get the conversion done?

Well I found a thread on Full-Size Chevy about this.  It seems like this guy started but then hit a few snags and stopped.
