Taking on a 350 Project

I am going to be purchasing a 350 to rebuild an want to know what to look for and what to stay away from. basically Im just looking for 250-300hp so nothing crazy just mainly want it for better mileage then what my 454 is giving me.

     Find someone if possible that has experience and let you watch you/guide you if you have never rebuilt an engine.  Bribing with beer usually works.   ;D
