Idling issues

I am new to this site but having some issues with my truck.  I have a 1979 K10 with a 350 4bbl quadrajet carb.  When I bought this truck it has not been taken care of very well.  I have replaced the valve cover gaskets, spark plugs, oil pan filter, steering stabilizer, air filter, and carb.  The carb was replaced with a remanufactured from national carburaters.  I also replaced the exhaust manifolds with long tube headers and new exhaust.  It has the "hot air" choke but the line the is supposed to run from the intake to the back of the carb is missing, but the hole is sucking awesome vacuum.  My problem is that it fires up just fine, but idle has a little stagger that fluctuates about 100 rpm.  In gear the truck drops to almost 500 rpm and then has the same fluctuation in rpm.  The last time I took it for a spin around the block it finally leveled out at one stop sign but then when I got on it sputtered and hesitated, but then caught.  I did it at the next stop and it just puffed some major black smoke and eventually died.  When i got it started it acted as though it was flooded.  It did start finally and idled just fine again.  I have adjusted the screws and adjusted them back.  I think the choke might be sticking though and cannot find a replacement part for this hot air and might have to go manual choke, but just wanted some advice if anyone has seen this issue and may know if it is something specific or what.

There are electric choke kits for that carb. This site is where I buy my parts from. Very high quality and tech service. They have the electric choke for your carb. Good luck

     I agree with the electric choke over manual choke.  But first check to make sure your float is sticking like you suspect.  The only real way is to operate it in park and check, but you should be able to tell.

If you don't have the hot air tubes, its staying closed too long--whether its sticking or not.

Looks like I am eventually going to go with the electric choke, as for now I have just screwed the choke plate wide open as the weather is warm enough not to need the high idle.  This is my temporary work truck and need it for some jobs.  Eventually I am going to do a full blown rebuild on this truck.
