What are you planning for the truck ?  How do you drive it ?  Is fuel economy a big issue for you or do you like your truck to spin the tires when you step on the gas ?
750 is plenty big enough with a stock 350.

600cfm is what I would recommend for a stock motor that isn't turning over 5000rpms.

The 1406 is a 600 cfm Electric choke carb, might as well just rebuild it, waste of money to buy the same carb again.

In my opinion, 750 is too much for a stock 350.

Size of the carb is one consideration, another is how will you be driving? 600 or 750 for the street? Well, how much time are you going to flat-foot it? Kind of carb style has a lot to do with it too. I have never been a Carter/Edelbrock fan. I have been a Holley guy for ever. The 600 that everyone used to use for the street is ok, but not a good performer. The 3310 (750 vac, sec) had been the best one for me. Remember you are going to probably be on the primaries almost all the time, i.e. 375, compared to 300. The 3310 seems to have better flow characteristics and easier to tune for me. Much more responsive as well. The thing I like with Holleys is that you can get parts anywhere and fix them on the side of the road. Been there, done that. Having run a racing fuel company, we ran Holleys on all the trucks. If I needed something, it was at the track too.

I plan to put one of my 3310s on my 355 that is going in my 83 silverado I got for mom for the farm. Quick pump shot for instant throttle. She even asked me if it is going to have a "nasty cam" in it. How cool is that. I am pushing 50 and she is her 70s.

Right now she has an anemic 305 with a 350 lockup. Not liking this set up at all.
