Either way is going to be a HUGE amount of work. First I would check with the DMV, especially if you plan on using the VIN from one cab to put on another cab. Typically this is illegal.
To put the 4x2 cab on the 4x4 frame it just bolts on. To clear the trans tunnel you MUST get the whole trans hump out and weld it into the 4x2 cab.
If you want to swap A/C you must fill the holes from the heater setup and then make a template and cut the new holes in the non-A/C cab to mount everything...
If the Chevy Cab is in good shape, I wouldn't switch them and it wouldn't be worth the trouble if all you are after is A/C. Vintage Air make a swap kit that fits in the existing hole where the heater went...
