has anyone put a set of 285/70/15's on a 15x10..Will it tuck with the right offset??

Absolutely!!
And they look great. Had a set on my stepside with room left to the lip.  Also stuck them on an '84 2wd Blazer, and they fit but were a little closer to the lip, but it still could have been lowered without problems.
