i know cutting the springs isnt recommended but how much off of a spring equals how much drop? seems like an inch off would equal an inch drop but what about spring compression? if cut properly and then aligned would it be alright?

There is nothing wrong with "cutting" a stock spring. As long as you don't use excessive heat to make the cut, it will be just fine. One coil equates to about a 2" drop but that depends on the condition of your springs.

What you never want to do is "heat "springs to get a drop. That will destroy the tempering and eventually the springs will sag, collapse, or even crack.  Here is a heated spring, and a cut spring so you can see the difference.

Its a weekend job for the average Joe. The shackles are the easiest thing to do because your basically pulling the old shackle out, taking your new one and mounting it in the original location *POCKET SIDE FORWARD*... as far as the hanger its just grinding the rivets off, popping them through the frame and getting some Grade 8 hardware to mount it back up its really idiot proof with that part. having 2 or 3 people to help is great. me and 2 buddies knocked out the hanger install in about 2 hours, and that was with removing the leaf springs completely, we also had the bed off because you WANT and NEED that room to work...
if your gonna be dumb you gotta be tough
