I would think your initial timing should be @ about 10 Degrees, but double-check that with someone
You may benefit from a little higher initial timing ( mine's @ 11 but I could get 12 maybe after I fatten up my primary circuit in my carb ), but you'll need to listen for knock under mild load, like uphill, so you don't get detonation
I can't push my timing up too much because of my Compression.....you may be able to go higher with your setup. Just don't let it Ping
Total timing may be OK up to 36 Degrees, depending on your parts and the Octane
Mine is OK @ 36 due to my Octane....no knocks/pings
Most pump fuel racers don't go above 36

It has a brand new trutrac in the rear, and will burn the 33 12.50s into 2nd gear... evertyhing holds up...
My issue is from a standing start, and lack of power up hills.

If I floor my 94 (150k mile)chevy going up a hill, it climbs right up to 80mph (or however fast you like)
But my 5,000 dollar(engine cost alone) 383 fights to hold 60mph

So, as we said, check your timings
If that doesn't help much, try a bigger carb

I will re-check my timing and see how that works.

I will also look into the a/f gauge!

I still wouldnt mind the highway gear...

What do you mean by highway gear? You don't want to kill that great stroker with bad gears !!!!!!!!

Your 3:42 is perfect for city/street performance driving

What you need is to put a 700R4 back in there

I run factory tires and I am @ about 16-1700 RPM @ 80 MPH on a flat, whereas my old TH350 was giving me almost 3200 RPM !!!!!!

Just some more info to think about/spend money on

Get a 700 built to handle the power/torque and you'll never look back

Just make sure you research the carb connections for the TV cable and get the wiring for the lockup

Timing, everybody has put you in the ballpark.
Cam specs would be helpful, especially since Vortecs are lift limited and you did say you still have the stock springs installed.  (ie. no "beehives", no mention of any head work to increase lift capacity)  Even my little Summit 1103 cam didn't have the lift clearance.
