Pretty sure they will.  You will need a compatible intake, and may as well take the cool distributor too.

will they need some grinding to make them fit or do they just bolt on? ive been reading that they need some self aligning rockers and the compatible intake... is there a performance upgrade to the stock intake?

I'm pretty sure the 99 Vortec heads are LSX heads and prolly won't work on your truck. If I am wrong someone will sound off, but I'm pretty sure I'm right on this

The heads range from 96-99 look for casting #062 or the sawtooth design on the front of the head. The heads bolt on. Stock vortech rockers are self aligning and will work, so try to get the heads with the rockers if possible or after market self aligning rocker are available. Another option would be guideplates. There are no stock carbed intakes for vortech motors but just about any after market intake would be an improvement over a stock '78 intake. As far as the intake goes just look up the part and read about it.
