I don't know anything about the GoPro but is the mic built it to the body of the camera?  Is there a built in wind screen?

Some time back we would strap a small digital camcorder to the handlebars on our bike to record riding the twisties on the back roads. Wind noise was always a problem. We tried putting foam rubber or cloth over the mic and it helped a little. The best fix was to get a cheap external mic wrap it with a piece if tube sock and tuck it behind the windshield.  It did muffle all sounds but there was none of that high pitch wind noise
