So from what I read before I drained my 203, you drain it from one of the 2 bottom bolts on the same side as the fill plug and then it takes 5 quarts to fill to the bottom of the fill hole.
I drained it until it stopped coming out of the bolt hole and started to fill it but it only took 3 quarts and then started flowing out of the fill hole. Am I supposed to drive it a little and then top it off? Or should it take the full 5 right away? Did it drain completely?

I think it should be around 5 pints not 5 quarts.

And you filled it with 30W oil, not gear lube, right?

That'll work.
In order to keep the gravity reservoir filled for the rear output shaft bearing when the hubs are FREE, shift it into HI LOC when you drive it the first time every day. After a couple miles, shift it into HI, which you can do on the fly. That will keep you from running that bearing dry. If the hubs are in LOCK (like in the winter), then there's no need, because the internals on the NP203 are being driven from the other end.
