I stuck in a mild 355 in my 1986 C1500 2WD (in place of the 4.3V6) plus a TH350C  and 4:56 gears in back

New power is on tap now but truck has a tendency to be twitchy at the wheel - truck gets bouncy and always feels like I am correcting left and right of center when the truck is on the go to keep my heading straight  - very unnerving to try any bursts of speed

Feels like its on knife edge - any slight turns cause immediate over compensating body roll ( or is it "yaw" )

I have done new shocks all around , 275 60-15 all around on stock wheels , the steering shaft coupler was replaced

admittedly I only did basic replacement of the worst/busted control arm bushings

Where do I go from here to get some more confidence in the truck going straight and to STOP TWERKING under power

Have you had the front end aligned?  Your description sounds like it has a Toe-in condition coupled with + caster

Check the front end thoroughly. Do a dry park check of the front end as well (wheels on the ground, rock the steering back and forth while observing for unwanted movement) typical points of common issue are frame flex/movement from loose rivets, cracked frame, faulty front end components, loose wheel bearings, etc. After you fix any issues as Zieg said... get an alignment but go to a real alignment shop.
