Take a few digital pix and a quick video of everything before you take it apart.

You need 2 heater hoses, 2 radiator hoses, 1 brake booster vacumn hose, 1 pvc hose, 1 vacumn hose for the vacumn advance and 1 vacumn hose for the vacumn canister that looks like a ball over by the blower fan. You will also need fuel hose or line and power steering hoses. There is a warm air hose that comes from the exhaust manifold to the air cleaner assembly which you might need if you live in a cold climate and it has trouble running in the cold. Everything else can be bypassed or plugged assuming you do not need to pass an emissions test.

And that's only if you live in an emissions county. Most Texas counties have no emissions test requirement regardless of year.

I had an inspector tell me, "if they cant see it, they dont look for it" The only things they look for is a cat (mostly 81-up), the factory air cleaner, and that stupid little heat riser tube from the air cleaner to the exhaust.(May be useful in colder climates, but we think cold is anything below 50F) It looks funny sitting there dangling over the top of the header, but will pass. Then just drive up the street and take it off til next year
. If it came with the cold air tube, they look for it too, but some arent as concerned about that part.
If its not your daily driver, yank all of it off, and just get antique tags. No inspection needed, and at $50 for five year tags it is very cost effective.

I don't have anything but a single cat and all the inspector did was perform a safety test, run the sniffer test, check the gas cap, and give me a new sticker. I passed with readings much lower than my old full-emission 305.
