I dont know if I would feel comfortable with someone using a water hose to keep the truck cool if the fan isn't installed. Or the fact that the truck has just been restored.

So many things wrong in that video, beginning with the ASE patch on the guy's shoulder. If I walked in and saw them doing that to my truck, I'd likely end up in jail.
There are two tools needed, duct tape and WD40. If it moves and shouldn't, use the duct tape. If it doesn't move and should, use the WD 40.

Well, you don't necessarily need the truck's cooling fan hooked up. Just a big ole shop fan to get airflow over the engine and through the radiator, preferably the cooling fan and shop fan though. "Restoration"? Really? A stepside halfton came from the factory with a 396 and what looks like a demon carburetor?

it wouldn't be my car.   I would've put all the parts on the car.  spin the motor over till oil pressure comes up a bit then put power to it . when engine starts. adjust timing if needed. then idle to 2000 rpms for 20 nin or so . water hose would only be for back up to put more water in the radiator .  This has worked for me on all the motors I've built.
