Is it possible to install a larger gas tank on the driver side and do away with the passenger side one?

Anything is possible with time, and money. If you wanted to move your fill into the wheel well a long bad tank might be able to be shoehorned in there to gain a few gallons.
Why do you not want duel tanks?

16 gallon is your limit on with the shortbox, unless you do a Blazer tank swap, you can fit a 30 gallon tank behind your axle, and do away with saddle tanks all together.
