I missed a couple of answers. 
350 with heads on, oil pan, valve covers, timing cover. 
Dual exhaust with headers and smoking from the right (passenger) side. 
Old engine had very high miles and overheated on the freeway. 
Coolant in the radiator - not strait water.  Also - new radiator. 
Oil pressure is running at 50-55 - best I can tell bc the value on my gauge is 20, 40, 60, and holds steady there. 

Also, I've got about 3 mins on video - the bubbling, exhaust, and temp gauge and can send the video.  I can't load it here because the file is too big but might be able to trim it.  I'll try so you can get a good look.

It doesn't sound like it's running especially well. It's really hard to say much without compression numbers, leak down, vacuum gauge results, etc.

I know working on our trucks can be relaxing, but it can get stressful when we run into problems. 
  What is O'Rileys doing to help you?.  It seems to me that if you bought it from a local store, you should be dealing with them to resolve any problems. If you bought a $50 rebuilt wiper motor from O'Riley's and it failed under warranty you would return it to the store you bought it from, not the rebuilder, right?
  Its something to look into.
  What did this motor cost?

I talked to the folks at O'Reilly and their policy is to deal directly with the company. 
The motor was $1189 total.

In addition, I've got the warmup, initial start on video.  I thought it was going to be an awesome thing to have for my scrapbook  (ha!) and it turns out that might come in handy if I need it to debate the motor. 
In all of this, I need to add that I'm just sick about the motor blowing coolant.  I was pleased with how it went in, how the truck looks - the engine compartment, the distraction with the health thing, and all that bs.....but the bottom line is that I'm sick about the outcome.  I was really looking forward to getting it painted, going camping this summer, and just standing in the garage staring at it.   Now I stare at it for a different reason.

  Its never fun running into problems on a
project.  Don't get discouraged, but don't rush into anything.
  I would talk to the manager at O'Riley's.  Ask him if he will refund your money or get you a replacemen motor (you probably already did that).
  I would think twice before pulling the heads off.  As others have pointed out, more testing needs to be done.  Its sounds like the engine builder just wants to send you a set of headgaskets and close your warranty claim.

most times you might void the warranty if you do pull the head regardless of what the manager said. i do remember when working for autozone some things would have a 1800 number for the customer to call instead of autozone being the middle man

That's the info I got earlier in this ordeal.  I got a 1-800 number and a claim with ATK.   I'm hoping to get some answers at Mayo today and then maybe that'll give me the motivation to get some answers at ATK or Oreilly.  Thank you for the info.  I still need to compression test and as soon as I'm there, I'll post some numbers.  Thanks again for all the input.

I wouldn't pull the heads on a motor under warranty

Dont let your credit card chargeback time run out
Usually it's 90 days ?

If you don't have a replacement engine in that time
I'd call your card issuer and initiate a chargeback

Save your emails and make notes of all your phone calls
Date and time of call, who you spoke to
What was said, and their number and extension
