I think you may have to narrow your rear axle or they will stick out further than the body

Now would a 12" with a 5 or 5.5" backspacing fit I wonder?

It won't tuck at 5".  I think you need about 6".  Best way to tell is to measure it.

So then a 10" wide rim would need 5" to tuck?

Yes.  I had 8.5" impalas on mine with 5" BS and you could probably get another 2" outward on mine.
I would still measure just to be certain.  If the bed got tweaked or the frame got tweaked it can throw it off a little.

I think I have 4.5" backspacing on my 10" wide slots and they are even with the body. So to fit I think 4" is the most you could go if you plan on really slamming it in the rear.

Most guys running larger rims (like 20-22's) are running a 9" wide rim with 5 or 5.5" backspacing.  I know you can run a 10 on there and tuck, but I don't know about a 12.  Like I said, measuring would be the best option.

Mine's a stepside, so there may be some difference but I run 10-inch wide wheels with 5-inches backspacing.  Tires are 295/50/16.  The truck is lowered 4-inches in the rear.  The tire is about 12-1/4 inches wide at it's widest point (section width) on the 10-inch rim.  There is about 1-1/8 inch clearance between the sidewall of the tire and the bed side, and about 3/8-inch clearance from the sidewall to the inner fender lip (the fender lip is not rolled).  Another 1/2-inch to 3/4-inch clearance at the fender lip could be gained by rolling the inner lip, allowing an 11-inch rim to be used with a slightly wider tire, provided I were to add another 1/2-inch backspacing.
