stalls when i give it gas in gear

Hey all, i have a 1986 chev halfton...305. I live in canada but anytime its like 5 degrees Celsius or below my truck takes a long time to heat up and if i try to drive it before it heats up it stalls...i can give it gas while its in neutral or park and it wont stall..but as soon as i put it into reverse or drive and give it a little gas it sputters and just dies. i was thinking heatriser but aren't those normally open? if it were why would it be stalling? any help would be greatly appreciated. thanks! its got electric choke.

rochester quadrajet, choke works it kicks down after awhile.

yes i added a tach not too long ago, when its in idle (park/neutral) its fine but soon as i put it into gear it barely gets 600rpm, tried adjusting the carb (the little spring piece on the right when looking into the engine compartment) and it seems to only adjust the idle rpm.

What kind of choke is on it?  manual or?  Are you letting it warm up enough before kicking it off?

electric choke, yes im letting it warm up plenty...is there any way of adjusting/tweaking with my elec choke?
